My mother has always been an inspiration for me and my cooking endeavors.

I remember that mom had made this one really big American flag cake for a Fourth of July when I was a kid.  This Third of July, I thought I would see if I could make a cake that large. (We did the third of July not the fourth)

The problem was, I really wanted to eat apple pie.....  I decided that it would also be a good idea to bake that as well.

The cake was a three layer cake with fruits and cream between each layer.  It was good, but it was also a big pain in the but to make as it measured 12" x 18".  The bottom layer was made from a simple cookie recipe, white the top two layers were made from a roll cake recipe.

People like the roll cake part, but apparently I mis-calculated the amount of baking soda for the cookies and thus the bottom layer was a bit bitter.

The apple pie was well balanced.  Not too sweet, not too tart.  I was actually pretty proud of myself!
